Recently China really opened up its boarders. So check here:
Nationals holding valid ordinary passports of 48 countries, namely Brunei, France, Germany, Italy, Spain, the Netherlands, Switzerland, Ireland, Hungary, Austria, Belgium, Luxembourg, New Zealand, Australia, Poland, Portugal, Greece, Cyprus, Slovenia, Slovakia, Norway, Finland, Denmark, Iceland, Andorra, Monaco, Liechtenstein, the Republic of Korea, Bulgaria, Romania, Croatia, Montenegro, North Macedonia, Malta, Estonia, Latvia, Japan, Brazil, Argentina, Chile, Peru, Uruguay, Saudi Arabia, Oman, Kuwait, Bahrain, Russia and Sweden are exempted from visa requirement if coming to China for the purpose of business, tourism, family or friends visits, exchange and transit. They can stay in China for no more than 30 days without a visa.

Choices are:
Cash: It is illegal for any restaurant or services in China to refuse cash payment. However, finding exact change for larger notes may be difficult. So keep some cash for emergency.
Card: Things like visa card or mastercard work in larger stores and restaurants. For smaller enterprises, they may refuse card payment.
Alipay or Wechat Pay: These are the universal payment tools in China. From restaurants to Taxis to random steam dumpling stand on the street. See here for more detail for Wechat (Weixin) Pay.

There is no Uber in China.
Do try DiDi available in Google Store or Apple Store
It will have the option to hail a ride (like how it works with Uber) or hail a taxi (where you pay with Alipay/Wechat or, in worst case scenario, cash)
